If you get given a cat that has been claimed to be microchipped but the old owner has lost all documents of it, what do you do, and how do you change the details when you do not know which company to approach

If you take the cat to the vet they should be able to scan for a chip and will be able to give you the details of the chip. I would have thought they can then tell you the company it is registered to and you can contact them and get the details changed over.
You may need to have a letter or some proof that the kitty is actually yours now though otherwise everyone would just steal cats and then transfer the chip details to themselves.
Probably best to have a word with vet ... they should know.

Once you have the chip number (each company have a unique start to the chip so you can work out who it is) you can start the process, they by law have to give 30days to the registered owner to respond, if the number the company has is not contactable they send a letter, if theres no reply then they can change the details. This is to protect those pets that are stolen.
There is very likely going to be a fee to update new details
