Isabel - it means 'fatty liver': the birds' livers become enlarged because of the force-feeding. That's what gives them the 'distinctive texture'. Wikipedia has a comprehensive entry on foie gras.

I'm never sure how much influence petitions have, to tell the truth, but I've signed this in the hope that it will help stop this abhorrent practice. I've boycotted foie gras (I speak a few words of French and the meaning of the name makes me shudder) all my life. Even if you don't sign the petition, please don't eat foie gras, here or en France.

CC towers have asked me to put a link to a petition to sign to help the animals involved in Foie Gras factories.
The manufacture of Foie Gras is done within production factories where thousands of animals are industrially force-fed by machines inducing atrocious suffering. The ducks and geese are force-fed by electropneumatic systems with approximately 800 g of corn a day where the half is injected in 3 to 5 seconds (the equivalent of 8 kg of noodles in 3 to 5 seconds for a man). The force-feding is done during 2 to 3 weeks in where the geese and ducks are locked in exiguous cages limiting and restricting all movements of the animal so that a faster fattening.
